To serve

  1. Combine the lemon and lime zest, caster sugar and 500ml water in a saucepan over a medium-low heat. Heat, gently stirring until the sugar dissolves. 
  2. Add the juice from the lemons and limes (you should have about 250ml). Allow to infuse for at least 30 minutes on a low heat, then remove from the heat and leave to cool. 
  3. Pour the mixture through a sieve and discard the zest. Pour into a large serving jug and top with 750ml of cold water.
  4. Add ice, sliced lemons and limes and mint before serving.
