For the kofte

To serve

  1. If using wooden skewers, soak in water for five minutes to stop them from burning in the pan or on the grill when cooking.
  2. Add all the kofte ingredients to a large bowl and mix with clean hands for 2-3 minutes. Divide the mixture into five, then form into approximately 10cm long sausages. Slide the kofte sausages onto the skewers, reshaping if needed as you go.
  3. In a large flat or griddle pan, cook the kofte skewers on a medium heat for approximately 10–12 minutes, until browned on all sides and cooked through.
  4. Serve family-style with toasted flat breads and delicious condiments in the centre of the table. Allow everyone to make their own kofte flatbreads.
