For the kofte
- If using wooden skewers, soak in water for five minutes to stop them from burning in the pan or on the grill when cooking.
- Add all the kofte ingredients to a large bowl and mix with clean hands for 2-3 minutes. Divide the mixture into five, then form into approximately 10cm long sausages. Slide the kofte sausages onto the skewers, reshaping if needed as you go.
- In a large flat or griddle pan, cook the kofte skewers on a medium heat for approximately 10–12 minutes, until browned on all sides and cooked through.
- Serve family-style with toasted flat breads and delicious condiments in the centre of the table. Allow everyone to make their own kofte flatbreads.
