Halloumi roasted vegetables

1 courgette, sliced

200g tenderstem broccoli

80g cherry tomatoes

1 x 225g block of halloumi, sliced

2 tbsp olive oil

Salt and black pepper

  1. Preheat the oven to 200°C/180°C fan/ gas mark 6.
  2. Combine the courgette, tenderstem, cherry tomatoes and halloumi in an ovenproof dish.
  3. Drizzle with the olive oil, season with salt and pepper and toss to coat.
  4. Roast for 15-20 minutes or until tender.
