1 courgette, sliced
200g tenderstem broccoli
80g cherry tomatoes
1 x 225g block of halloumi, sliced
2 tbsp olive oil
Salt and black pepper
- Preheat the oven to 200°C/180°C fan/ gas mark 6.
- Combine the courgette, tenderstem, cherry tomatoes and halloumi in an ovenproof dish.
- Drizzle with the olive oil, season with salt and pepper and toss to coat.
- Roast for 15-20 minutes or until tender.
