- In a small bowl, combine the lime zest, juice and honey.
- Dip the cut side of each peach half into the lime mixture, then dust with some of the sugar and ginger. Reserve the rest of the lime sauce.
- Place the peaches, sugar side down, on the centre of the barbecue. Cook for 4-5 minutes or until golden brown. Remove from grill.
- Serve the peaches with the vanilla ice cream and drizzle with some of the remaining lime sauce.
