Siúcra Filipino pork adobo

Filipino_pork_adobo Easy Food

Serves 4-6

2 tbsp vegetable oil
900g pork shoulder, cut into chunks
60ml white vinegar
80ml low sodium soy sauce
6 garlic cloves, sliced
2 bay leaves
2 tsp black peppercorns
1 tbsp Siúcra Brown Sugar
480ml chicken stock

To serve:

  1. Heat the oil in a large casserole dish over a medium-high heat. Working in batches to avoid crowding the pan, brown the pork on all sides. Transfer to a plate and set aside.
  2. Add the vinegar to the dish and bubble for one minute, scraping any sticky bits from the bottom of the pan using a wooden spoon.
  3. Stir in the soy sauce, garlic, bay leaves, black peppercorns, sugar and stock. Return the pork pieces to the pan and bring to a boil. Reduce the heat to low, then cover with a lid and simmer gently for 11⁄2 hours.
  4. Remove the lid and continue simmering for another 30 minutes until the sauce has thickened. Serve over rice.
