To serve:
- Heat the oil in a large casserole dish over a medium-high heat. Working in batches to avoid crowding the pan, brown the pork on all sides. Transfer to a plate and set aside.
- Add the vinegar to the dish and bubble for one minute, scraping any sticky bits from the bottom of the pan using a wooden spoon.
- Stir in the soy sauce, garlic, bay leaves, black peppercorns, sugar and stock. Return the pork pieces to the pan and bring to a boil. Reduce the heat to low, then cover with a lid and simmer gently for 11⁄2 hours.
- Remove the lid and continue simmering for another 30 minutes until the sauce has thickened. Serve over rice.
