  1. Combine the dressing ingredients in jar, seal the lid and shake to combine well.
  2. In a large bowl, combine the tomatoes, cucumbers, pepper, radishes, spring onions, parsley and mint. Season with salt and black pepper, sprinkle with the sumac and toss gently to combine.
  3. Add the torn pitta breads to the salad and drizzle the dressing over everything. Toss to combine, then serve.
