To garnish

  1. Season the chicken with salt and pepper.
  2. In a large pan, heat the oil. When hot, add the chicken and cook for 5-8 minutes, browning on all sides.
  3. Add the veg to the pan and cook for two minutes. Add the sauce, bring to a simmer and cook for a further two minutes.
  4. Cook the noodles according to pack instructions.
  5. Add the Bok choy and noodles to the pan and mix well until heated through.
  6. Divide into bowls and top with scallions.
