Makes 1 medium bowl
Ingredients:
- 2 x 198g tins of sweetcorn, drained
- 2 green chilli peppers, deseeded and chopped (leave some seeds in for more heat if desired)
- ½ a red onion, finely chopped
- Large handful of fresh coriander, chopped
- Juice of 2 limes
Method:
- Combine all ingredients in a bowl and stir to combine.
- Season well with salt and pepper. Add more coriander, chilli or lime according to taste.
- Place in the fridge for at least 30 minutes to let the flavours come together, then allow to come to room temperature before serving.
