Corn salsa


Makes 1 medium bowl


  • 2 x 198g tins of sweetcorn, drained
  • 2 green chilli peppers, deseeded and chopped (leave some seeds in for more heat if desired)
  • ½ a red onion, finely chopped
  • Large handful of fresh coriander, chopped
  • Juice of 2 limes


  1. Combine all ingredients in a bowl and stir to combine.
  2. Season well with salt and pepper. Add more coriander, chilli or lime according to taste.
  3. Place in the fridge for at least 30 minutes to let the flavours come together, then allow to come to room temperature before serving.
