Serves 4
1 tbsp olive oil
400g beef mince
1 onion, finely chopped
2 garlic cloves, crushed
3 tsp cumin
1 tsp paprika
Salt and black pepper
4 tbsp tomato purée
2 tbsp tomato relish
2 tbsp water
2 large pizza bases
150g ball of mozzarella, torn
6 cherry tomatoes, halved
To serve:
100g rocket
- Heat the oil in a saucepan over a medium heat and cook the mince for 6-8 minutes until it is browned all over and no pink parts remain, breaking up any lumps using a wooden spoon. Add the onion and garlic and cook for 2-3 minutes until softened.
- Stir in the cumin, paprika and some salt and black pepper. Stir in the tomato puree, relish and water and set aside.
- Preheat the oven to 220°C/200°C fan/gas mark 7. Line two baking trays with non-stick parchment paper.
- Place a pizza base on each tray. Top the pizza base with the mince mixture, then add the mozzarella and cherry tomatoes. Bake for 15-20 minutes or until the bases are crisp and the cheese is melted.
- Top with some rocket before serving.
