Ch-una sandwich

Serves 2
400g chickpeas, drained and rinsed
squeeze lemon juice
4 tbsp vegan mayonnaise, plus extra for spreadin
1/2 red onion, chopped
2 spring onions, chopped
1/2 198g tin of sweetcorn, drained
Salt and black pepper
4slices of sourdough bread
Lettuce leaves
1 tomato, sliced


  1. Place the chickpeas in a bowl and roughly mash about three-quarters of them with the back of a fork or a potato masher to reach your desired consistency, ideally leaving the mixture a little chunky.
  2. Add the lemon juice, vegan mayonnaise, red onion, spring onions and sweetcorn. Mix well, adding any extras you like. Season to taste.
  3. To assemble your sandwich, spread two slices of bread with vegan mayonnaise and top with lettuce leaves, slices of tomato and finally the chickpea mixture. Top with the remaining slices of bread and wrap up until needed. Serve chilled or at room temperature.
