Carrot hummus

Serves 2-4 as a snack 
2 carrots (roughly 200g) peeled, cut into chunks and boiled until very tender
1x 200g tub of plain hummus

To serve:
Breadsticks and/or crudités
  1. Place the cooked carrots in a bowl and mash with a fork. Add the hummus
    and stir to combine well.
  2. Serve with lots of breadsticks or chopped crunchy vegetables, for dipping.

Per serving: Per 100g serving of hummus 103kcals, 4.8g fat (0.7g saturated), 12.1g carbs (2.5g sugars), 4.4g protein, 4.2g fibre, 0.224g sodium

Top tip: This is also delicious made with sweet potato. Because it’s sweeter than carrots, we recommend adding a squeeze of lemon.
