Caramelised banana sundaes


Serves 2 (easily doubled)

30g butter
2 firm bananas, thickly sliced
2 tbsp brown sugar
½ tsp cinnamon
2 scoops of good quality vanilla ice cream

  1. Melt the butter in a pan over a medium-low heat. Add the bananas and sprinkle over the brown sugar. Cook for five minutes until golden and syrupy.
  2. Sprinkle with cinnamon, if desired. Spoon the caramelised bananas over vanilla ice cream to serve.
