For the mango avocado salsa
To serve
- If you’re using wooden skewers, soak them in cold water for 30 minutes before using.
- Place the prawns in a bowl and drizzle over the olive oil. Sprinkle with the cajun seasoning and set aside for 10 minutes.
- In a bowl, stir together all of the ingredients for the salsa. Season with salt and black pepper, then set aside.
- Thread the prawns onto the soaked skewers. Heat a grill pan over a high heat and cook the skewered prawns for 2-3 minutes per side until pink and cooked through.
- Serve with the salsa, rocket leaves and an extra squeeze of lime.
