Banoffee pots


Makes 6 small pots (or 4 larger glasses)

500g mascarpone
3 tbsp golden syrup
2 tsp vanilla extract
6 tbsp salted caramel sauce, plus extra to
3 ripe bananas, sliced
60g toffee popcorn
10g dark chocolate, grated

  1. In a bowl, mix the mascarpone, golden syrup and vanilla extract until combined. Divide half of the mixture amongst six small glasses or bowls.
  2. Add one tablespoon of caramel sauce and some sliced banana to each.
  3. Spoon over the remaining mascarpone mixture and top with toffee popcorn.
  4. Drizzle over a little more caramel sauce and sprinkle with grated dark chocolate
