To garnish
- Season the chicken with salt and pepper.
- In a large pan, heat the oil. When hot, add the chicken and cook for 5-8 minutes, browning on all sides.
- Add the veg to the pan and cook for two minutes. Add the sauce, bring to a simmer and cook for a further two minutes.
- Cook the noodles according to pack instructions.
- Add the Bok choy and noodles to the pan and mix well until heated through.
- Divide into bowls and top with scallions.
