White chocolate cheesecake bites

Makes 8

60g white chocolate
120g soft cream cheese, at room temperature

8 shortbread biscuits
200g fresh blueberries
30g dark chocolate, grated

  1. Place the white chocolate in a small saucepan over a low heat. Cook for 2-3 minutes or until melted. Remove from the heat, add the cream cheese and stir until well combined.
  2. Spread or pipe the white chocolate cream cheese mixture over the shortbread biscuits. Top with the blueberries.
  3. Sprinkle the dark chocolate over the cheesecake bites.
