- Melt the butter in a pot over a medium-high heat. Cook the turkey giblets, onion, thyme and carrots for 5-6 minutes until browned. Scatter over the flour and cook for 5-6 minutes, stirring.
- Pour in the strained turkey juices and the water and cook for 20 minutes, stirring frequently.
- Skim off any fat and strain the mixture through a sieve into a clean pot. Reduce the liquid over a medium heat until it reaches your desired consistency. Season to taste before serving.
