200g porridge oats
60g almond butter (or seed butter)
1 ripe Fyffes banana, mashed
80g dried mango, chopped
80g desiccated coconut
- In a large bowl, stir together the porridge oats, almond butter and honey. Mix until well combined.
- Add the mashed banana and stir.
- Add the dried mango and stir again until everything is combined. Place in the fridge for about 30 minutes. Put the desiccated coconut in a small bowl. Scoop out about one tablespoon of the oat mixture and use clean hands to roll it into a ball. Roll the ball in the desiccated coconut. Continue until all the mixture has been used; you should end up with about 12 energy bites.
