  1. Melt the butter with the olive oil in a large casserole dish over a medium heat. Add the onions, garlic and ginger and cook for 5-6 minutes until softened. Add the cabbage, apple and balsamic and stir to combine well.
  2. Add the cinnamon stick, star anise, mixed spice and redcurrant jelly. Stir for two minutes until the jelly has melted.
  3. Season generously, cover with a lid and simmer over a low heat for 1- 1 1⁄2 hours until the cabbage is softened, stirring occasionally. Discard the cinnamon stick and star anise before serving.
