- Melt the butter with the olive oil in a large casserole dish over a medium heat. Add the onions, garlic and ginger and cook for 5-6 minutes until softened. Add the cabbage, apple and balsamic and stir to combine well.
- Add the cinnamon stick, star anise, mixed spice and redcurrant jelly. Stir for two minutes until the jelly has melted.
- Season generously, cover with a lid and simmer over a low heat for 1- 1 1⁄2 hours until the cabbage is softened, stirring occasionally. Discard the cinnamon stick and star anise before serving.
