  1. Preheat the oven to 170˚C/150˚C fan/gas mark 3.
  2. In a bowl, combine the cinnamon, ginger, vanilla extract and olive oil.
  3. Add the cashews and toss to coat thoroughly in the spices.
  4. Transfer to a baking tray and bake for 10-12 minutes.
  5. Allow to cool, then store in an airtight container.
