- Purée the strawberries in a blender or food processor until smooth.
- Add the sugar and blend again for 30 seconds. Add the lemon juice and salt and blend to incorporate.
- Strain the purée through a sieve and discard the pulp. Refrigerate the smooth purée in a plastic container for 2-3 hours. Transfer to the freezer and freeze for 5-6 hours, stirring every 1-2 hours until completely frozen and smooth.
