Spicy grilled cod

Serves 4-4
4 cod fillets
170ml lime juice
2 tbsp dried Thyme
1 shallot, chopped
2 garlic cloves, crushed
1 tsp chilli powder
2 tsp paprika
60ml olive oil
  1. Preheat the grill to high. Line a rimmed baking tray with tin foil and coat with cooking spray. Add the cod fillets.
  2. Combine the remaining ingredients in a food processor and pulse until they form a paste.
  3. Spread over the cod and grill for 6-8 minutes until the fish flakes easily when tested with a fork. Serve warm with a side of rice.
