Serves 2

90g dark chocolate (85% cocoa solids), chopped
400ml milk
100ml cream
½ tsp cinnamon
1 tsp vanilla extract
Pinch of salt
1 red chilli, halved and deseeded
2 tbsp brown sugar, or to taste

  2. Whisk in the remaining milk along with the cream, cinnamon, vanilla and salt. Add the chilli to the pot and bring the mixture almost to a boil. Remove the pot from the heat and let it sit for 10 minutes. Remove and discard the chilli.
  3. Whisk in the sugar, one tablespoon at a time, and taste until it reaches your desired level of sweetness. Add the brandy or Cointreau, if using.
  4. Return to a very low heat until hot, then pour into mugs. Place a cinnamon stick in each mug and serve.
