5-6 mint leaves
1 lime, juice
2 tsp sugar
Ice cubes, half-fill the glass
30ml white rum
1 tbsp coconut rum
60ml coconut milk
Sparkling water

In a glass, use a muddler or the handle of a wooden spoon to break down mint leaves with the juice of lime and sugar. Half-fill the glass with ice cubes. In a blender, combine white rum, coconut rum and coconut milk. Pulse until smooth. Pour the rum mixture over the ice and stir to combine. Top up with sparkling water, then garnish with fresh mint and pomegranate, to serve.
