In a glass, use a muddler or the handle of a wooden spoon to break down 5-6 mint leaves with the juice of 1 lime and 2 tsp sugar. Half-fill the glass with ice cubes. In a blender, combine 30ml white rum, 1 tbsp coconut rum and 60ml coconut milk. Pulse until smooth. Pour the rum mixture over the ice and stir to combine. Top up with sparkling water, then garnish with fresh mint and pomegranate, to serve.
