  1. Place the red onion in the bottom of the slow cooker in one layer. Add the baby potatoes and chicken thighs on top.
  2. In a small bowl, combine the lemon and lime zest and juice, olive oil, honey, garlic, thyme and some salt and black pepper. Whisk to combine well, then pour over the ingredients in the slow cooker.
  3. Cover with the lid, then cook on high for 3-4 hours or low for 6-8 hours.
  4. Around 15 minutes before the cooking time is over, set the slow cooker to high if it isn’t already. Add the green beans and cook for the final 15 minutes.
