For the brownie layer:

  1. Preheat the oven to 180˚C/160˚C fan/gas mark 4. Line a 20cm square tin with non- stick parchment paper.
  2. First, make the cookie base. In a large bowl, beat together the butter and sugar until light and fluffy. Beat in the egg and vanilla.
  3. Stir through the flour, cornflour, bicarbonate of soda, salt and chocolate chips.
  4. Pour the mix into the prepared tin and press into an even layer.
  5. Top the cookie base with the Oreos in an even layer. Place the tin in the freezer for 10 minutes or until firm.
  6. For the brownie layer, melt together the dark chocolate and butter, in a pot over a low heat. Allow to cool slightly.
  7. Beat in the eggs and sugar. Fold in the flour, cocoa powder and chocolate chips.
  8. Remove the cookie base from the freezer. Pour the brownie mix over the base.
  9. Bake for 30-35 minutes or until a skewer is inserted and comes out clean. Allow to cool fully before cutting into nine large or 16 small squares.
