- Preheat the oven to 180˚C/160˚C fan/gas mark 4. Line a 20cm square tin with non- stick parchment paper.
- First, make the cookie base. In a large bowl, beat together the butter and sugar until light and fluffy. Beat in the egg and vanilla.
- Stir through the flour, cornflour, bicarbonate of soda, salt and chocolate chips.
- Pour the mix into the prepared tin and press into an even layer.
- Top the cookie base with the Oreos in an even layer. Place the tin in the freezer for 10 minutes or until firm.
- For the brownie layer, melt together the dark chocolate and butter, in a pot over a low heat. Allow to cool slightly.
- Beat in the eggs and sugar. Fold in the flour, cocoa powder and chocolate chips.
- Remove the cookie base from the freezer. Pour the brownie mix over the base.
- Bake for 30-35 minutes or until a skewer is inserted and comes out clean. Allow to cool fully before cutting into nine large or 16 small squares.
