To serve
- Soak eight wooden skewers in cold water for 10 minutes.
- Heat a barbecue or griddle pan until almost smoking.
- Push three prawns and three mango pieces onto each skewer. Brush with oil and barbecue or grill for 2-3 minutes each side until cooked through.
- Slide the prawns and mango off each skewer into a lettuce leaf. Add some carrot and sprinkle with the sesame seeds.
- In a bowl, mix the chilli, lime zest and juice, fish sauce and sugar. Serve with the lettuce cups for dipping.
