Roasted red onions and pears Easy Food

Serves 8


4 semi-ripe pears, quartered and cored
2 large red onions, each cut into 8 wedges
30g butter, melted
2 tbsp apple cider vinegar
Salt and black pepper
2 sprigs of rosemary, leaves picked

  1. Preheat the oven to 220˚C/200˚C fan/gas mark 7. In a large baking dish, toss the pears and onion with the melted butter and vinegar. Season generously with salt and pepper.
  2. Arrange the pears and onions in a single layer and scatter over the rosemary. Cover tightly with foil and bake for 20-25 minutes until the pears begin to soften.
  3. Uncover and bake for a further 15-20 minutes until the pears are golden brown and tender.
  4. Serve warm or at room temperature.
