Roast plum and toasted almond porridge

4 plums, pitted and halved

1 tbsp honey
30g flaked almonds
80g porridge oats

550ml milk

Pinch of salt

  1. Preheat the oven to 180 ̊C/160 ̊C fan/gas mark 4. Place the plums cut-side up in a small dish and drizzle with the honey and two tablespoons of water. Bake for 15 minutes.
  2. Place the flaked almonds on a baking tray and add to the oven for the last five minutes.
  3. Meanwhile, place the porridge oats in a saucepan and add the milk and a pinch of salt. Bring to the boil, then reduce the heat and simmer for 4-5 minutes, stirring from time to time and watching carefully that it doesn’t stick to the bottom of the pot.
  4. Divide the porridge between two bowls and top with the roasted plums, then drizzle over any excess juice from the dish and top with the flaked almonds.
