- Preheat the oven to 180 ̊C/160 ̊C fan/gas mark 4. Place the plums cut-side up in a small dish and drizzle with the honey and two tablespoons of water. Bake for 15 minutes.
- Place the flaked almonds on a baking tray and add to the oven for the last five minutes.
- Meanwhile, place the porridge oats in a saucepan and add the milk and a pinch of salt. Bring to the boil, then reduce the heat and simmer for 4-5 minutes, stirring from time to time and watching carefully that it doesn’t stick to the bottom of the pot.
- Divide the porridge between two bowls and top with the roasted plums, then drizzle over any excess juice from the dish and top with the flaked almonds.
