  1. Combine the raspberries and mint in a large jug. Mash using the end of a rolling pin or a cocktail muddler.
  2. Add the sugar and lime juice and stir until the sugar has dissolved. Pour in the pink gin, then mix again.
  3. Fill the jug with crushed ice, then top it up with soda water. Add the remaining raspberries, lime wedges and mint sprigs. Serve immediately.
