- Combine the raspberries and mint in a large jug. Mash using the end of a rolling pin or a cocktail muddler.
- Add the sugar and lime juice and stir until the sugar has dissolved. Pour in the pink gin, then mix again.
- Fill the jug with crushed ice, then top it up with soda water. Add the remaining raspberries, lime wedges and mint sprigs. Serve immediately.
