For the stir-fry:
- In a bowl, combine the ingredients for the sauce. Set aside.
- Cook the noodles according to the package instructions. Drain in a colander, then drizzle over half of the sesame oil and set aside in the colander.
- Meanwhile, heat the remaining sesame oil in a pan over a medium-high heat. Cook the onions and cabbage for five minutes until softened. Add the mushrooms and cook for two minutes. Stir in the spring onions and garlic and cook for one minute longer.
- Add the noodles and stir-fry for two minutes to heat through. Pour in the sauce and cook for another two minutes until everything is well coated and hot. Serve immediately.
