For the brandy seafood sauce:
- Thread three prawns on to each skewer. In a small bowl, combine the sea salt, pepper and paprika.
- Brush the prawns with the olive oil and sprinkle with the seasoning mixture. Heat a grill pan over a high heat and cook the skewered prawns for 2-3 minutes per side until pink and cooked through.
- To make the seafood sauce, combine the mayonnaise, hot sauce, ketchup, lemon juice and zest, then gently stir in the brandy.
- Drizzle the skewered prawns with the sauce and serve the remaining sauce on the side.
