Prawn skewers with brandy seafood sauce

Serves 8


24 large prawns
8 short wooden skewers, soaked in hot water for 30 minutes
1 tsp sea salt
1 tsp black pepper
1 tsp smoked paprika
Olive oil, for brushing


For the brandy seafood sauce:
240g mayonnaise
2 tbsp hot sauce (e.g. Franks)
3 tbsp ketchup
2 tsp lemon juice
Zest of ½ a lemon
2 tsp brandy


  1. Thread three prawns on to each skewer. In a small bowl, combine the sea salt, pepper and paprika.
  2. Brush the prawns with the olive oil and sprinkle with the seasoning mixture. Heat a grill pan over a high heat and cook the skewered prawns for 2-3 minutes per side until pink and cooked through.
  3. To make the seafood sauce, combine the mayonnaise, hot sauce, ketchup, lemon juice and zest, then gently stir in the brandy.
  4. Drizzle the skewered prawns with the sauce and serve the remaining sauce on the side.
