Plum and quinoa crumble

Serves 4


600g plums, stone removed and sliced
100g caster sugar
250g quinoa, cooked
75g oats
50g butter, chilled and grated
2 tbsp maple syrup


  1.  Preheat the oven to 180°C/160°C fan/gas mark 4.
  2. In a saucepan, combine the plums and caster sugar. Place over a medium heat for 4-5 minutes until softened and syrupy. Spoon into an ovenproof baking dish.
  3. In a separate bowl, mix the quinoa, oats and butter until clumps form. Stir in the maple syrup and spoon over top of the fruit.
  4. Bake for 25-30 minutes, until the crumble is golden on top. Serve warm with custard or ice cream.
