Pico de gallo

Serves 4
6 ripe tomatoes, diced (good-quality)
1 white onion, finely chopped
2 spring onions, sliced (optional)
1 green chilli, finely chopped
Fresh coriander, roughly chopped
1 lime, juiced
Salt and black pepper

To serve:
Tortilla chips
  1. Stir all the ingredients together in a bowl and season with salt and black pepper. Taste and adjust seasoning or add more lime juice if needed.
  2. Let your pico rest for 15 minutes before serving with tortilla chips; this gives the flavours time to mingle and brings out their best.
