2 spring onions, sliced (optional)

Fresh coriander, roughly chopped

- Stir all the ingredients together in a bowl and season with salt and black pepper. Taste and adjust seasoning or add more lime juice if needed.
- Let your pico rest for 15 minutes before serving with tortilla chips; this gives the flavours time to mingle and brings out their best.
