Peanut butter cookie cake
Serves 8
200g butter
250g light brown sugar
1 egg
1 tsp vanilla essence
320g plain flour
1 tsp bicarbonate of soda
150g chocolate chips
300g crunchy peanut butter
  1. Preheat your oven to 180°C/160°C fan/gas mark 3.
  2. Mix the butter and sugar until light and fluffy.
  3. Add in the egg and vanilla essence and continue mixing until fully combined.
  4. Next, add in the flour, bicarbonate of soda and the chocolate chips and mix with a spatula until it comes together in a smooth dough.
  5. Press half the mixture into a lined tin and add the peanut butter.
  6. Make a lid with the remaining dough.
  7. Bake for 25-30 minutes until golden.1
