- Preheat your oven to 180°C/160°C fan/gas mark 3.
- Mix the butter and sugar until light and fluffy.
- Add in the egg and vanilla essence and continue mixing until fully combined.
- Next, add in the flour, bicarbonate of soda and the chocolate chips and mix with a spatula until it comes together in a smooth dough.
- Press half the mixture into a lined tin and add the peanut butter.
- Make a lid with the remaining dough.
- Bake for 25-30 minutes until golden.1
