250g orzo pasta
1 carrot, peeled and finely chopped
1 red pepper, deseeded and finely chopped
80g frozen baby peas
60g broccoli florets, finely chopped
1 tbsp olive oil
Salt and black pepper
- Bring a pot of salted water to the boil and cook the pasta for seven minutes.
- Stir in the carrot, pepper, peas and broccoli and cook for another five minutes.
- Drain the pasta and stir in the sweetcorn and oil. Season to taste.
