- In a large jug, combine the lime juice with the squeezed-out lime shells, the passion fruit pulp and about half of the mint. Mash together with the end of a rolling pin or a muddler, then stir in the simple syrup and rum. Allow to sit for 5-10 minutes to infuse.
- Strain the mixture through a sieve, pushing with the back of a spoon to make sure you get as much pulp and flavour as possible; discard what’s left in the sieve.
- Place a handful of ice and some of the remaining mint leaves in each glass. Fill the glasses one-third full with the strained cocktail mixture. Top up with equal amounts of tonic and ginger ale. Add a lime wedge to each glass and serve.
How to make simple syrup: You can buy simple syrup, but it’s so easy, quick and cheap that we always recommend making your own. Just combine equal volumes of water and sugar (120ml water per every 100g sugar) in a saucepan, bring to a boil for 2-3 minutes until the sugar has dissolved, and then remove from the heat and allow to cool completely.
