  1. In a medium bowl, combine the flour, salt, sugar and baking powder.
  2. In a jug, whisk together the milk, egg and melted butter.
  3. Pour into the dry ingredients and whisk to combine.
  4. Preheat a non-stick pan over a medium-high heat and coat with cooking spray. Add about a tablespoon of batter to form a circle in the pan.
  5. Add a lollipop stick and smooth the batter over it using a spatula.
  6. Cook for 1-2 minutes until bubbles start to form on the top of the batter. Pour a little extra batter over the part of the stick that is exposed.
  7. Carefully flip the pancake and cook for another 1-2 minutes until light golden brown on both sides. Repeat with the remaining batter and lollipop sticks to form 20-30 small pancake pops. Serve with syrup, for dipping.
