  1. Preheat oven to 180°C/160°C fan/gas mark 4 and line a loaf tin with greaseproof paper.
  2. Whisk the eggs in a large bowl, then mix in the nuts, seeds, raisins, dates, olive oil, salt and cinnamon.
  3. Pour the bread batter into the lined tin, pressing down firmly so the batter is evenly spread. Bake for one hour on the middle shelf of the oven.
  4. Remove from oven and let it cool completely before serving.

Test Kitchen Tips: You can leave the traditional idea behind and add dark chocolate, candied orange, or dried figs and it will be delicious too! 

This loaf can be stored in an air-tight bag or container for up to 5-6 days.
