- Preheat oven to 180°C/160°C fan/gas mark 4 and line a loaf tin with greaseproof paper.
- Whisk the eggs in a large bowl, then mix in the nuts, seeds, raisins, dates, olive oil, salt and cinnamon.
- Pour the bread batter into the lined tin, pressing down firmly so the batter is evenly spread. Bake for one hour on the middle shelf of the oven.
- Remove from oven and let it cool completely before serving.
Test Kitchen Tips: You can leave the traditional idea behind and add dark chocolate, candied orange, or dried figs and it will be delicious too!
This loaf can be stored in an air-tight bag or container for up to 5-6 days.
