Non-alcoholic cranberry punch

Serves 6-8

2 oranges
1.5L cranberry juice
1 x 5cm piece of ginger, peeled and grated
7 cloves
1 cinnamon stick
1 vanilla pod, split
100g fresh cranberries
100g caster sugar

  1. Peel the oranges and place the rind in a large saucepan. Squeeze the juice from the oranges and add to the pan along with the cranberry juice.
  2. Add the grated ginger, cloves, cinnamon, vanilla pod, cranberries and sugar. Bring to a simmer, stirring until the sugar dissolves, then heat gently for 10- 15 minutes to infuse the flavours.
  3. Serve in heatproof glasses or mugs, garnished with some extra orange peel and cranberries.
