1.5L cranberry juice
1 x 5cm piece of ginger, peeled and grated
1 cinnamon stick
1 vanilla pod, split
100g fresh cranberries
100g caster sugar
- Peel the oranges and place the rind in a large saucepan. Squeeze the juice from the oranges and add to the pan along with the cranberry juice.
- Add the grated ginger, cloves, cinnamon, vanilla pod, cranberries and sugar. Bring to a simmer, stirring until the sugar dissolves, then heat gently for 10- 15 minutes to infuse the flavours.
Serve in heatproof glasses or mugs, garnished with some extra orange peel and cranberries.
