Mixed berry trifle

Serves 4-6
135g raspberry jelly
200g sponge, cubed
400g frozen mixed berries, defrosted
500g custard
200ml cream, whipped
100g toasted flaked almonds
  1. In a heatproof jug, dissolve the jelly according to the package instructions, stirring until completely dissolved.
  2. Arrange the cubes of sponge into a large glass bowl or individual glasses. Top with the fruit, then continue layering to within 3cm of the top of the bowl.
  3. Pour over the jelly. Place in the fridge until the jelly has set.
  4. Once set, pour over the custard.
  5. Top with the whipped cream. Sprinkle on toasted flaked almonds.
