150g unsalted butter, melted, plus extra for greasing
200g light brown sugar
1 tsp vanilla extract
65g cocoa powder
2 eggs
50g plain flour
100g milk chocolate chips
To serve:
Ice cream
- Grease a 22cm microwave-safe dish.
- In a bowl, combine the melted butter, sugar, vanilla and cocoa powder. Use electric beaters to whisk until combined.
- Add the eggs, one at a time, beating after each addition. Gently fold in the flour and chocolate chips.
- Pour into the prepared dish and cook in the microwave on full power for 4-5 minutes. Allow to cool before cutting, as the brownies will firm up as they cool.
- Serve warm with ice cream.
