For the dressing

  1. Cut each melon in half, remove the seeds and slice, ball or cut into cubes, whichever you prefer. Transfer the melon to a bowl and set aside.
  2. To make the dressing, stir half the basil together with the honey and lemon juice.
  3. Gently toss the melon, mozzarella pearls, smoked salmon and cherry tomatoes in the dressing, and divide into serving bowls.
  4. Scatter with the remaining chopped basil to serve.
