For the dressing
- Cut each melon in half, remove the seeds and slice, ball or cut into cubes, whichever you prefer. Transfer the melon to a bowl and set aside.
- To make the dressing, stir half the basil together with the honey and lemon juice.
- Gently toss the melon, mozzarella pearls, smoked salmon and cherry tomatoes in the dressing, and divide into serving bowls.
- Scatter with the remaining chopped basil to serve.
