- Preheat the oven to 180˚C/160˚C fan/gas mark 4 and coat a 23cm square baking tray with cooking spray, or brush with vegetable oil.
- In a food processor, combine the oatmeal, skimmed milk powder, sunflower seeds, flour, maple syrup and eggs.
- Process for 10 seconds until the mixture is smooth. Stir in the cranberries, apricots and almonds, then pour into the prepared baking tray. Sprinkle with coconut flakes.
- Bake for 20-25 minutes or until the edges are golden and the centre is set.
